No gluten, no problem for Mayo Clinic's Specialized Kitchen

Four years ago, Mayo Clinic’s gluten-free kitchen didn’t exist. This inspired Nowicki and other food service leaders at Mayo Clinic and Morrison Healthcare, Mayo Clinic’s food service partner, to create a gluten-free kitchen for patients. Now a team of 12 staff bake, box and transport 10,000 goods a week to Mayo Clinic properties across Minnesota and Wisconsin. [more]
